The joys of summer

I despise the humidity in the summer. I mean hate it. Every year I remember how much I dread the heat, but you know what I am starting to remember what I LOVE about the summer? The fresh produce. For some reason with this "getting healthy" thing, I have even more of an appreciation for it. Many of my days are started with a bowl of fresh fruit, hell I end most days with it too. It seems silly but you realize that food just grows better in the summer. Genius, right? Blueberries are my absolute fave. I just love them in yogurts, cereals and just by the handful. They are always in the my fridge during the summer months. While on vacation we went through 5 pints! Ugh, it was mostly by me (see yesterday's note about healthy foods in moderation). They make me wish I could bake, but then again I don't like my fruits warm, so it would be a waste. Food issues, I know.

I'm looking forward to picking up more plums, peaches and mangoes this week. And watermelon? Forgetaboutit! I could go on and on about tomatoes, zucchinis and fresh basil. Yum. All are all better in the summer. Soon my father in-law (the original Mr. Greenjeans) will be giving me tons of veggies from his garden (I'm on overload with the zucchini already), so that means new recipes to try out. I guess I shouldn't dread the summer as much, but I do, just now it's JUST the humidity that I hate.
